It's used to trick the Search Engines. It's use is to increase the keyword density for ads and traffic for specific keywords. However, overuse of the keywords, will cause keyword stuffing and you might get penalty for doing this. It's safe to avoid this practice.

nicole, the invisible text will not be seen by the user but the search engines will be able to see it. So, it is used to increase your keyword density in your post or page, so that Google will rank your page higher than other pages.

Similarly, if you use adsense, the invisible text will also be used to display contextual ads in your page. Thus, if you do it well you have better chances to rank higher and increase CPC revenue.

However, Google doesn't like this practice and the overuse of the keywords will cause keyword stuffing. So, better to avoid it and optimize your article itself for the keywords you want to rank.
